Smart Ag Initiative in Patras, Greece

The Smart Agri-good Systems chair, Dr. John Verboncoeur represented the initiative at the 11th IEEE International Smart Cities Conference “Resilient & Sustainable Smart Communities” (ISC2 ) which took place on October 6th-9th, 2025, Patras, Greece.

He discussed how enhanced expiration and nutrition label standards could transform food safety, personalization, and sustainability—
introducing a range of cutting-edge ideas aimed at reshaping the future of food systems. Key highlights include:

  • Replacing expiration labels with 2D printed RFID bio-chem sensors: estimate → actuals improve safety and reduces food waste
  • Replacing static ingredients & nutrition label with dynamic information including interactions
  • Personalized nutrition based on actual absorption
  • Food provenance
  • Carbon footprint from production to table
  • AI: Optimize menus for nutrition and waste reduction
  • Optimize for personal microbiome
  • AI: Detect and manage food allergies and interactions
  • Connect to wearables to manage health in real time.

The ISC2, the flagship IEEE conference for Smart Cities, is sponsored by the IEEE Smart Cities Community and the IEEE Power & Energy Society. It is organized by the Industrial Systems Institute, Athena RC, and the Computer Technology Institute & Press “Diophantus”.
